    I do as my grandpa said, and eat my potatoes unpeeled. I usually cook them without salt, often with carrots. I drink the unsalted cooking water, for the potassium. It is very good, better than sweet drinks. You can cool it down first. I try to cook the potatoes in advance, the day before consuming, for letting them debelop resistant starch. I love planning food and meals. Thank you for your great blog.
